Butternut squash, also known in Australia and New Zealand as butternut pumpkin, is a type of winter squash. It has a sweet, nutty taste similar to that of a pumpkin.  Our Positive Power Partner Whole Foods Market says:

Sunscreen...a necessary essential all year long, but especially now.  Before you head to the beach or even your own backyard, double check your sunscreen for an expiration date.  If it has expired, get a fresh bottle.

COCONUT CHIA PUDDING

Ingredients:
2 tablespoons chia seeds
½ cup coconut milk, unsweetened
1 tablespoon coconut flakes, unsweetened
1/8 cup cinnamon
½ teaspoon vanilla extract
1 teaspoon maple syrup

Stir together chia seeds, coconut milk, coconut flakes, cinnamon, vanilla extract and maple syrup.  Cover and set aside for at least 10 minutes.

Top with ¼ cup of berries (strawberries, blueberries, raspberries or any other) and 2 table spoons of sliced almonds.
